CREAMY MUSHROOM SOUP

INGREDIENTS
–– 50g of butter
–– 2 tablespoons olive oil
–– 1 large onion finely chopped
–– 4 cloves garlic finely chopped
METHOD
1. Fry all this together until the onion and garlic are translucent ...don’t brown them
2. Add in 1.5 kg of sliced mixed mushrooms - use all different types of
mushrooms ...lots of flavour.
3. Sautée until mushrooms give off their own liquid
4. Add in 1.5 litres of chicken or. Vegetable stock and a dash of soy sauce and cook
it all up... bring to the boil cook for about 30 mins
5. Add salt and pepper to taste ( I actually don’t add any salt as the stock was tasty
enough)
6. When cooked you will need to blend it all up so you get a smooth thick soup.
7. If too thick add more stock to loosen it up.
8. Garnish with chives and drizzle truffle oil and serve with fresh crusty bread.
