Ms Lindon’s Insta Worthy –
Beans on Toast
Ingredients -
1 tbs olive oil
1 tsp butter
1 chopped onion
½ tsp smoked paprika
1 can of cannellini beans drained and rinsed
350g of passata (half a bottle)
1 heaped tsp of tomato paste
Dash of water
Pinch of sugar
Salt and pepper to taste
Sourdough (or any other bread!)
Parmesan cheese (optional)
Method
In a saucepan, heat olive oil and butter over medium heat.
Add onion and stir until soft.
Add paprika and cannellini beans. Cook for 2 minutes.
Stir in the passata, tomato paste, water, sugar, salt and pepper.
Bring to a simmer and cook covered for 10-15 minutes.
Toast sourdough and serve on a plate.
Spoon beans on toast. (There will be leftovers)
Grate some parmesan cheese on top and enjoy!
NOTES:
- If you wish, you can use chickpeas instead of cannellini beans.
- Feel free to throw in some baby spinach, mushrooms, zucchini etc.
- You can serve with a poached egg (or two!) on top.
