ORANGE CAKE

INGREDIENTS
185g Butter
1 ½ cups of caster sugar
Finely grated rind of one orange
3 eggs
2 cups of self raising flour
⅔ cup of milk
⅓ cup of fresh orange juice
Icing sugar to decorate
METHOD
1. Lightly grease base and side of a 23cm round cake pan - line base with
baking paper.
2. Beat butter, sugar and rind in a bowl with an electric mixer until light
and fluffy. Beat in eggs one at a time, until combined. Fold in sifted
flour and combined milk and juice in two batches. Pour mixture into
prepared cake pan.
3. Cook in a moderate oven (180 C) for about 50 mins, or until cooked when
tested with a skewer. Stand cake in pan for 5 mins before turning out onto
A wire rack to cool
4. Serve cake dusted with icing sugar and Enjoy! :)
