Zoe's Caramel Slice Recipe

Zoe Ibrahim's Caramel Slice is an amazing treat for those with a sweet tooth !!

Prep time: 25 min

Cook time: 40 min

Serves: 16


Ingredients

150g plain flour

110g brown sugar

40g desiccated coconut

125g butter, melted, plus 100g extra

1 can (395g) of Sweetened Condensed Milk

80 mL golden syrup

200g Chocolate Dark, melted

1 Tbsp vegetable oil

Method:

  1. Preheat oven to 180°C/160°C fan forced. Lightly grease an 18cm x 28cm tin and line with baking paper.

  2. In a medium bowl, combine flour, sugar and coconut. Add melted butter, mix well. Press mixture firmly into prepared pan. Bake for 15-20 minutes until lightly browned. Remove from oven and let it cool.

  3. Whilst the base is cooling, combine extra butter, sweetened condensed milk and golden syrup in a medium saucepan. Stir over low heat until smooth. Pour over base. Bake for 20-25 minutes until golden. Then remove from oven and wait for it to cool completely to move onto the next step.

  4. To melt the chocolate, place chocolate in a microwave safe bowl; microwave uncovered for 30 seconds, then take out and stir. Repeat process in 20 second intervals until the chocolate has melted. Once melted add oil and stir until smooth, pour evenly over slice. Place in refrigerator to set.

  5. Once chocolate has set, take the slice out of the pan with the help of the overhanging baking paper. Place on chopping board and cut into pieces. Enjoy.

Tips:

  1. Ensure that when melting solid ingredients (such as the chocolate & butter), ensure that you cut it up into smaller pieces before melting it so it doesn’t burn or splatter.

  2. After pouring the melted chocolate on the cooled slice, DO NOT put it in the freezer to set as when you cut the slice afterwards the chocolate will crack uncontrollably.
